Zucchini & Corn Muffins

Ingredients

1 cup (150g) plain flour
1 cup (170g) medium yellow cornmeal (see tip)
1 tablespoon sugar 1 tablespoon baking powder 1 egg ½ cup (125ml) reduced-fat milk ¼ cup (60ml) vegetable oil 300g can of creamed corn
2 small zucchini, coarsely grated

Super Rocky Road

Another variation of this recipe is to replace the milk chocolate with dark chocolate, the peanuts with macadamia nuts and the raspberry jellies with glace pineapple or any glace fruit.

Ingredients

250g good milk chocolate
200g marshmallows, cut into halves
¼ cup desiccated coconut
½ cup peanuts, chopped
½ cup raspberry jellies, chopped

Beef and pasta bake

1 carrot, peeled and grated

Pasta ,Tomato and Cheese Salad

Ingredients

1 cup cooked pasta (see tip) 10 grape tomatoes, halved 50g low-fat Swiss cheese slices, cut into strips 100g baby rocket leaves 150g ham, cut into strips 2 teaspoons olive oil 1 teaspoon cider vinegar

Method

Combine all ingredients in a bowl; add pepper to taste then spoon into an airtight container. Chill until required.
